This combines the features of a Gyuto (chef's ) and a Santoku, making it versatile for cutting meat, fish, vegetables, and more.
The length is slightly longer at 19cm to accommodate large ingredients like whole cabbages and Chinese cabbings.
The longer also allows for slicing sashimi with a single pull.
